lazy dinners....

last night i was feeling less than motivated to make dinner for myself so i decided on one of my super easy "recipes" that has stayed in my top ten list for years.
you may wonder... why the " " around recipes... well i am notorious for my "recipes" that consist mostly an ingredient list and the key phrase "till it's right"
that is how i cook. i make my recipes as i go. if i like it i remember it. if not, its banished to the deep recesses of my brain but not forgotten (don't want to make the mistake of trying it again!).
so if anyone wants to try this, it isn't an exact science, and everyone can make adjustments to make it just right for themselves!

here goes.

Sweet Potato and Goat Cheese Soup.

  • one big sweet potato (yam)
  • enough water to cover the potatoes in a pot
  • milk or cream (anyone who knows me knows i don't mess around with the fat content of my dairy products... the thicker the better!)
  • butter
  • salt
  • pepper
  • rosemary
  • brown sugar
  • goat cheese
ok... so here's what i do.
  1. peel and cube the sweet potato and toss it into the water as you go so it doesn't turn black
  2. add salt and pepper to taste.
  3. add a generous pinch of rosemary. i like to add it in the beginning because i most often have to rely on dry rosemary and its like little twigs otherwise!
  4. cover and cook on medium to medium high heat until the potatoes are soft and half the water has cooked off.
  5. add a dallop of butter and stir it in so its all melted in.
  6. add a tablespoon or so of brown sugar (more or less depending on your preference). you can also use some maple syrup instead.
  7. the goat cheese comes next. this is very scientific... add a good sized chunk of it. i like to crumble it so its easier to mix in.
  8. now comes the milk or cream. this is where its up to you. i use cream if i have it, homo milk is my second choice.
  9. this is where it gets fun. i LOVE my immersion blender. blend everything together and add milk/cream until you get a consistency that you are happy with.
  10. once you finish blending it keep the burner on medium low to bring the soup back up to the tempurature you like it at and ENJOY!
i sometimes like to crumble a little extra goat cheese on top as a garnish. who can say no to a little extra goat cheese.

use leftover roasted sweet potatoes instead of boiling them. i will just throw them in the pot with the milk/cream, get them hot and then add the seasoning and blend.

i'm already looking forward to my lunch today.

mmmmmm.... soup.

time to get this blog thing back on track...

Ok... i know i have said this many times before, but i really want to try and keep up with this thing!
so yet again i am making an attempt to become a better blogger.

well i thought i would start out with something that i find mildly disgusting but amusing none the less.
some people REALLY love bacon. i mean REALLY.
there are bacon products out there that should be illegal.
here are some of the goodies i found.

what do you think?

bacon flavored hotsauce. Interesting. wouldn't try it.

bacon candle... no thanks!

bacon lip balm - i'll pass

bacon toothpaste - this is just seems wrong

bacon rimmer - this might be good

OMG this one has to be the worst. the picture.... *shudder*

bacon soda - again... just doesn't do it for me.

Home Sweet Home

Vacation is wonderful... but its good to be home.

I missed my furbabies.

I missed my boring routine.

I missed my messy house - though I'm working hard to remedy the messy part.

I missed crocheting and making jewelry (yes I'm that lame)

I missed cooking and baking.

Even though I was only away for a week - I was ready to come home. just needed a little break from everything.

Rested and relaxed I am ready for the year to come.
